Truffle Base
- 2 cups (236ml) whipping cream
- 1 ½ cups (204g) cake mix
- 1 cup (100g) graham cracker crumbs
- ½ cup (80g) chocolate chips
- 1 cup (200g) white chocolate
- 1 tsp (5ml) pink food coloring
- 1 tsp (5ml) watermelon flavoring oil
Coating
- 1 tsp (5ml) green food coloring
- 1 tsp (5ml) coconut oil
- Additional white chocolate for melting and coating (approximately ½ cup / 100g)
Instructions
- Melt Chocolate: In a saucepan over medium-high heat, combine the heavy whipping cream and two-thirds of the white chocolate. Stir occasionally until the chocolate has completely melted and the mixture is smooth.
- Add Cake Mix and Flavoring: Remove from heat and add the cake mix along with the pink food coloring. Stir well to fully combine, then mix in the watermelon flavoring oil. Allow the mixture to cool until it is comfortable to touch.
- Incorporate Dry Ingredients: Stir in the graham cracker crumbs and chocolate chips using a spatula until evenly distributed throughout the mixture.
- Form Truffles: Using your hands, scoop portions of the mixture and roll them between your palms to form smooth balls. Place these balls onto a lined plate or baking sheet.
- Chill Truffles: Place the formed truffles in the refrigerator and chill for 30 minutes to firm up.
- Prepare Chocolate Coating: Melt the remaining white chocolate until smooth and creamy. Stir in the coconut oil and then remove from heat. Add the green food coloring and mix until the color is uniform.
- Dip Truffles: Using a fork, dip each chilled truffle ball into the green chocolate coating, allowing excess chocolate to drip off. Carefully place coated truffles back onto a lined plate.
- Set Coating: Refrigerate the coated truffles for about 20 minutes or until the green chocolate coating is fully hardened.
