Ingredients
Scale
Fruits
- 2 medium semi-ripe bananas
Nut Butter
- 1/2 cup + 2 tablespoons drippy, creamy peanut butter
Chocolate & Additives
- 1.5 cups dark chocolate chips
- 1 teaspoon coconut oil (optional)
- Flaky sea salt (optional)
Instructions
- Prepare the baking sheet: Line a medium-sized baking sheet with parchment paper to ensure easy removal of the banana bark later.
- Slice the bananas: Peel and slice the bananas into approximately 1/3-inch thick slices, cutting them on a slight angle to help them fit together more snugly and evenly on the baking sheet.
- Arrange banana slices: Place the banana slices on the lined baking sheet in a rectangular shape, making sure the slices touch one another so the bark holds together better when frozen.
- Spread peanut butter: Evenly spread the drippy, creamy peanut butter over the banana slices, covering them completely. If the peanut butter is too thick, warm it for 10-15 seconds in the microwave to soften. Once spread, place the baking sheet in the freezer for 20 minutes to allow the peanut butter layer to set.
- Melt the chocolate: After 20 minutes, melt the dark chocolate chips in a microwave-safe dish by heating in 30-second intervals, stirring between each until mostly melted and smooth. Be careful not to burn the chocolate.
- Coat with chocolate and add toppings: Remove the banana and peanut butter bark from the freezer, pour and spread the melted chocolate evenly over the top. Optionally, sprinkle flaky sea salt or any other desired toppings at this stage.
- Freeze to set: Return the bark to the freezer for at least 90 minutes, up to 2 hours, until the chocolate is fully hardened.
- Serve: Once set, flip the bark over, peel off the parchment paper, and break the bark into large pieces. Serve immediately and enjoy this cool, delicious treat.
Notes
- Use semi-ripe bananas for the best balance of sweetness and firmness.
- Adjust the amount of peanut butter to your taste, but ensure it covers the bananas well to bind the bark together.
- Coconut oil can help make the chocolate smoother and easier to spread but is optional.
- Flaky sea salt enhances the flavor with a pleasant contrast to the sweetness.
- Try adding toppings like chopped nuts, shredded coconut, or chili flakes for added texture and flavor.
- Store any leftovers in the freezer in an airtight container; consume within 3–4 days for best freshness.
