Instructions

  1. Arrange Pecans: Arrange 18 small piles of toasted pecan halves evenly spaced on a lined baking sheet to form the base of your turtle candies.
  2. Melt Caramel: In a microwave-safe bowl, combine the unwrapped caramels and the milk. Microwave at 50% power in 45-second intervals, stirring thoroughly after each interval until the mixture is smooth and fully melted.
  3. Coat Pecans with Caramel: Spoon the melted caramel over each pecan pile, spreading it slightly so that the pecans stick together and form a cohesive cluster. Allow the caramel to set and firm up for about 30 minutes at room temperature.
  4. Melt Chocolate: While the caramel sets, melt the semi-sweet chocolate chips and shortening together. Use the microwave at 50% power, heating in 45-second intervals and stirring after each until smooth.
  5. Top with Chocolate: Spoon the melted chocolate over the caramel-coated pecan clusters. It’s fine to allow some pecans to peek through the chocolate for texture and visual appeal.
  6. Set the Chocolate: Allow the chocolate to cool and harden completely before serving or storing, ensuring the turtles hold their shape.
