  • 2 slices sourdough bread, or bread of choice
  • Freshly cracked black pepper, to taste

Instructions

  1. Prepare the whipped cottage cheese: Place the cottage cheese in a food processor fitted with an S blade. Blend for 1-2 minutes until smooth, creamy, and free of lumps.
  2. Make the tomato basil medley: In a small mixing bowl, combine the diced tomatoes, chopped basil, extra virgin olive oil, balsamic vinegar, and a pinch of salt. Stir gently to mix all ingredients thoroughly.
  3. Toast the bread: Toast the sourdough slices in a toaster until golden and crisp to your preference.
  4. Assemble the toast: Spread a generous dollop or two of the whipped cottage cheese evenly onto each slice of toasted bread.
  5. Add the tomato basil topping: Spoon several large spoonfuls of the tomato basil mixture on top of the whipped cottage cheese-covered toast.
