Sauce and Sardines
- 1 tbsp olive oil
- 1/2 white onion, sliced
- 1 garlic clove, minced
- 1/2 tbsp mixed herbs
- 1/2 tbsp paprika
- 1 tsp chilli flakes
- 400g tinned tomatoes
- 240g tinned sardines
- Pinch of flaky salt
- Freshly ground black pepper
Eggs and Garnish
- 2 eggs
- Parsley, chopped (for garnish)
Instructions
- Prepare the base: Place a non-stick frying pan on medium heat and add the olive oil. Add the sliced onions, minced garlic, mixed herbs, paprika, chilli flakes, a big pinch of flaky salt, and a grind of black pepper. Fry for a few minutes until the onions and garlic soften and the spices become fragrant.
- Add tomatoes and sardines: Pour in the tinned tomatoes and add the tinned sardines. Lightly mash the sardines with your spatula and stir to combine. Let the mixture simmer and cook for an additional 5 minutes to allow flavors to meld together.
- Cook the eggs: Make two small wells in the sardine tomato sauce and carefully crack an egg into each indent. Place a lid on the frying pan and cook for 3-5 minutes or until the egg whites are set but the yolks remain slightly runny.
- Finish and serve: Once the eggs are cooked, sprinkle chopped parsley over the dish. Serve immediately while hot, enjoying the rich sauce and tender eggs together.
