Shrimp Filling
- 8 oz Shrimp (peeled and deveined)
- 3 Scallions (white and green parts, chopped)
- 1 tsp Ginger (fresh and grated)
- 1 large garlic clove (grated, or 2 small cloves)

- 2 tsp Rice vinegar
- 2 tsp Sesame oil
- 1 Lemon (zest only)
- 1/4 cup Chipotle Mayonnaise (Sir Kensington’s or similar)
- Salt and pepper (to taste)
For Wrapping and Baking
- 16–20 Wonton wrappers
- Chives (for tying each bag)
- Avocado oil spray (for greasing baking sheet and spraying bags)
Dipping Sauce
- 2 tbsp Chipotle Mayonnaise (Sir Kensington’s or similar)
- 2 tbsp Honey
- 1 tbsp Tamari (or soy sauce)
- 2 tsp Rice vinegar
Instructions
- Prepare the shrimp paste: Chop the peeled and deveined shrimp finely until it forms a paste-like consistency. This will be the base of the flavorful filling.
- Mix the filling: In a mixing bowl, combine the chopped shrimp paste with scallions, grated garlic, grated fresh ginger, chopped cilantro, sesame oil, lemon zest, rice vinegar, chipotle mayonnaise, salt, and pepper. Mix thoroughly to blend all flavors. Cover and refrigerate the mixture for 15 minutes to allow flavors to meld.
- Assemble the golden bags: Lay out the wonton wrappers on a clean surface. Place approximately 1 teaspoon of the shrimp filling in the center of each wrapper. Carefully gather the edges to form a little bag, then tie the top securely with a chive strand to keep the filling enclosed during baking.
- Prepare the baking sheet: Lightly spray a baking sheet with avocado oil spray. Place the tied golden bags spaced evenly on the sheet. Spray each bag lightly with avocado oil to ensure crispiness during baking.
- Bake the bags: Preheat the oven to 400°F (200°C). Bake the golden bags for 20 to 25 minutes, or until they turn fully golden brown and crisp on the outside.
- Make the dipping sauce: While the bags bake, whisk together chipotle mayonnaise, honey, tamari, and rice vinegar in a small bowl until smooth and well combined.
- Serve and enjoy: Remove the golden bags from the oven, let cool slightly. Serve warm with the prepared dipping sauce on the side for a delicious appetizer or snack.
