Instructions
- Blend Cookies: Place the sugar cookies into a blender or food processor and blend until they turn into fine crumbs, ensuring no large pieces remain.
- Combine Ingredients: Add the softened cream cheese and vanilla extract to the cookie crumbs. Pulse the mixture until fully combined and smooth. If the dough feels too firm, add an additional ounce of cream cheese and pulse again.
- Scoop and Roll: Line a baking sheet with parchment or freezer paper. Using a small cookie scoop or tablespoon, scoop out the dough and roll into evenly sized balls. Place them on the lined baking sheet.
- Freeze the Truffles: Place the tray with the rolled balls into the freezer for about 20 minutes, or until the truffles are firm enough to handle for dipping.
- Melt Chocolate: In a microwave-safe bowl, melt the chocolate wafers by heating for 1 minute. Stir the chocolate until smooth, and if necessary, heat for an additional 15-30 seconds to fully melt and achieve a silky consistency.
- Dip Truffles: Using a fork, dip each chilled truffle ball into the melted chocolate, ensuring it’s fully coated. Tap the fork gently on the side of the bowl to remove excess chocolate, then slide the dipped truffle off the fork onto the lined pan. Use a toothpick to assist if needed.
- Add Sprinkles: Immediately after dipping each truffle, sprinkle with your choice of sprinkles to decorate before the chocolate sets.
- Chill to Set: Place the decorated truffles in the refrigerator until the chocolate coating is fully set and firm, about 15-30 minutes, before serving.
