Instructions

  1. Preheat the Oven: Preheat your oven to 475 degrees Fahrenheit and line a baking sheet with parchment paper to prepare for the salmon.
  2. Prepare the Salmon: Pat the salmon filets dry with a paper towel. Rub each filet with olive oil and season both sides evenly with salt and pepper.
  3. Create a Pocket: Using a sharp knife, carefully cut a horizontal slit along the side of each filet to form a pocket for the stuffing. Be careful not to cut all the way through.
  4. Sauté Spinach: In a medium pan over medium-high heat, add the water and sauté the baby spinach until wilted. Remove from heat and drain any excess liquid.
