Crust
- 24 Golden Oreo cookies

- 1 ½ cup heavy whipping cream
- 1 cup fresh strawberries (puréed)

Instructions
- Prepare Crust: Crush Golden Oreo cookies using a food processor or by placing them in a ziplock bag and pressing with a rolling pin until finely crushed. Mix in the melted salted butter until the crumbs are well coated and hold together.
- Form Crust: Spray a 9-inch springform pan with cooking spray. Press the crust mixture evenly along the bottom and about one inch up the sides of the pan. Place the crust in the freezer while you prepare the filling to help it set.
- Make Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, lemon juice, and vanilla extract. Use an electric mixer and beat until smooth and creamy.
- Whip Cream: In a separate bowl, whip the heavy cream using a whisk attachment of a hand mixer or stand mixer until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture to maintain the light, fluffy texture.
- Divide Filling: Split the filling mixture in half, transferring one half to a separate bowl.
- Add Strawberries: Fold the puréed fresh strawberries gently into one half of the cheesecake mixture until fully combined.
- Assemble Cheesecake: Pour the strawberry cheesecake filling over the prepared crust and smooth the surface evenly. Then layer the remaining plain cheesecake filling over the strawberry layer and smooth the top.
- Freeze: Cover the assembled cheesecake with plastic wrap and place it in the freezer for at least 4 to 5 hours, or preferably overnight, to allow it to firm up and set.
- Add Topping: Remove the cheesecake from the freezer and carefully remove it from the springform pan. Coat the top and sides evenly with the strawberry shortcake crumble topping.
- Final Freeze & Serve: Return the cheesecake to the freezer until ready to serve. When serving, allow it to thaw for 10 to 15 minutes for easier slicing and best texture.
