Kabocha Squash

Instructions
- Preheat and soften squash: Preheat your oven to 425°F. Place the whole kabocha squash in the oven and warm it for 10 minutes to make slicing easier.
- Prepare baking sheets: Line two baking sheets with parchment paper to prevent sticking and for easy cleanup.
- Slice and season squash: Carefully cut the warmed squash in half vertically, use a spoon to scoop out the ribbing and seeds. Slice each half into approximately 1½-inch thick slices. Arrange the slices evenly on the prepared baking sheets. Drizzle them with olive oil and season liberally with sea salt and freshly ground black pepper.
- Roast the squash: Roast the slices in the oven for 25 to 30 minutes, flipping them halfway through cooking. The squash should turn golden brown, the flesh tender, and the edible skin soft.
- Assemble and serve: Lay the roasted squash slices on a shallow platter. Drizzle with sesame ginger dressing, sprinkle with chopped scallions, sesame seeds, and microgreens. Adjust seasoning with additional salt and pepper if needed, then serve immediately.
