Instructions

  1. Make the Reuben Filling: In a mixing bowl, combine the finely chopped corned beef, drained and chopped sauerkraut, shredded Swiss cheese, softened cream cheese, and garlic powder. Mix everything thoroughly until well combined to create a uniform filling.
  2. Shape and Chill: Roll the mixture into 1-inch balls, ensuring they are compact and evenly sized. Place these balls on a parchment-lined tray and freeze them for 20–30 minutes to help firm them up, which will make breading and frying easier.
  3. Bread the Balls: Prepare a breading station with separate dishes of flour, beaten eggs, and seasoned breadcrumbs. Coat each chilled ball first in flour, then dip into the beaten eggs, and finally roll in the seasoned breadcrumbs. For a thicker, crunchier crust, repeat the egg and breadcrumb coating steps once more.
  4. Fry: Heat oil in a deep fryer or heavy pan to 350°F (175°C). Fry the breaded balls in batches for 3 to 5 minutes, or until they turn a beautiful golden brown and crisp. Remove the balls with a slotted spoon and drain them on paper towels to remove excess oil.
