- 1 cup canned pumpkin puree (unsweetened)
- 1–2 Tbsp honey (plus additional for serving)

- Black pepper, freshly cracked to taste

Instructions
- Make whipped feta: Add the drained feta cheese and Greek yogurt to a food processor. Blend them together for a few minutes until the mixture is very smooth and creamy, stopping to scrape down the sides with a spatula as needed.
- Add pumpkin and seasonings: To the whipped feta mixture, add the canned pumpkin puree, 1 or 2 tablespoons of honey depending on your desired level of sweetness, dried or fresh thyme, and a few cracks of freshly ground black pepper. Blend again until everything is thoroughly combined into a smooth dip.
- Chill the dip: Transfer the whipped feta dip to a covered container and refrigerate it for 30 to 60 minutes. Chilling allows the flavors to meld and the dip to firm up for the best texture.
- Garnish and prepare to serve: Once chilled, transfer the dip into a serving bowl. Garnish with a handful of chopped walnuts if using, sprinkle generously with fresh thyme leaves, drizzle additional honey on top, and add more fresh black pepper to taste.
