  • 1 cup canned pumpkin puree (unsweetened)
  • 12 Tbsp honey (plus additional for serving)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Black pepper, freshly cracked to taste

Instructions

  1. Make whipped feta: Add the drained feta cheese and Greek yogurt to a food processor. Blend them together for a few minutes until the mixture is very smooth and creamy, stopping to scrape down the sides with a spatula as needed.
  2. Add pumpkin and seasonings: To the whipped feta mixture, add the canned pumpkin puree, 1 or 2 tablespoons of honey depending on your desired level of sweetness, dried or fresh thyme, and a few cracks of freshly ground black pepper. Blend again until everything is thoroughly combined into a smooth dip.
  3. Chill the dip: Transfer the whipped feta dip to a covered container and refrigerate it for 30 to 60 minutes. Chilling allows the flavors to meld and the dip to firm up for the best texture.
  4. Garnish and prepare to serve: Once chilled, transfer the dip into a serving bowl. Garnish with a handful of chopped walnuts if using, sprinkle generously with fresh thyme leaves, drizzle additional honey on top, and add more fresh black pepper to taste.
