Potato Candy Dough

  • ½ cup plain mashed potatoes, cooled
  • ½ cup salted butter, softened
  • 7 cups powdered sugar, plus extra for rolling
  • 2 teaspoons vanilla extract

  • 1 cup creamy peanut butter

Instructions

  1. Make the dough: In a large bowl, using an electric mixer, combine the cooled mashed potatoes, softened butter, vanilla extract, and 1 cup of powdered sugar until well mixed.
  2. Incorporate remaining sugar: Gradually add the remaining powdered sugar, 1 cup at a time, mixing thoroughly after each addition. Continue until the dough reaches a pliable, playdough-like consistency that is not sticky.
  3. Chill the dough: Cover the dough and refrigerate it for 1 hour to firm up.
  4. Divide the dough: Once chilled, split the dough into two equal portions.
  5. Roll out dough: Dust a parchment-lined surface with powdered sugar and roll one half of the dough into a rectangle about ¼ inch thick, working quickly to prevent crumbling.
  6. Spread peanut butter: Evenly spread half of the creamy peanut butter over the rolled-out dough.
  7. Roll into a log: Starting from the longer side, carefully roll the dough into a tight log using the parchment paper to assist with the rolling.
  8. Chill the candy log: Wrap the log in parchment paper and refrigerate for another hour to set.
  9. Repeat with remaining dough: Roll out, fill, and chill the second half of the dough using the same method.
  10. Slice and serve: After chilling, slice each candy log into approximately ½ inch pieces and serve.

Notes

  • Make sure the mashed potatoes are plain with no added milk, butter, or seasoning before using.
  • The dough must be chilled to handle easily and prevent crumbling during rolling.
  • Use creamy peanut butter for smooth spreading; crunchy peanut butter may cause tearing.
  • Store the potato candy wrapped in parchment and refrigerated. It can also be frozen for longer storage.
