  • Author: Aiden
  • Total Time: 25 minutes
  • Yield: About 30 pizzelle cookies 1x

Description

Pizzelle are traditional Italian Christmas cookies known for their delicate, crisp texture and beautiful patterns impressed by a pizzelle iron. Made from a simple batter of eggs, sugar, flour, butter, and flavorings like vanilla, these thin, waffle-like cookies are quick to make and perfect for holiday celebrations or anytime you desire a light, sweet treat.

Ingredients

Scale

Ingredients

  • 3 large eggs
  • 3/4 cup (149g) granulated sugar
  • 3/8 teaspoon table salt
  • 1 teaspoon King Arthur Pure Vanilla Extract
  • 1 3/4 cups (210g) King Arthur Unbleached All-Purpose Flour
  • 2 teaspoons baking powder
  • 8 tablespoons (113g) unsalted butter, melted

Instructions

  1. Combine wet ingredients: In a large bowl or the bowl of a stand mixer, beat together the eggs, sugar, salt, and vanilla extract until the mixture is well combined and slightly fluffy.
  2. Add dry ingredients: Stir in the flour and baking powder to the egg mixture, mixing until the batter is smooth and free of lumps.
  3. Incorporate butter: Pour in the melted unsalted butter and mix again until the batter is thick, soft, and homogenous.
  4. Preheat pizzelle iron: Heat your pizzelle iron according to the manufacturer’s instructions, and grease the plates lightly to prevent sticking.
  5. Cook pizzelle: Place a spoonful of batter on the iron and cook for about 45 seconds to 2 1/2 minutes, or until the cookies are golden brown and crisp, following your iron’s guidance.
  6. Cool and trim: Carefully remove each pizzelle from the iron and cool them on a wire rack. Use scissors to trim any uneven or ragged edges if desired.
  7. Optional finishing touch: Dust the cooled pizzelle lightly with confectioners’ sugar for an elegant look and subtle sweetness.
  8. Store properly: Enjoy pizzelle immediately for best texture, or store leftovers in an airtight container for up to one week or freeze up to one month.

Notes

  • Be sure to grease your pizzelle iron plates before each batch to prevent sticking.
  • The batter will thicken as it sits; work relatively quickly to maintain the best consistency.
  • Pizzelle can be shaped while warm for curls or tubes if looking for decorative presentation.
  • Use high-quality vanilla extract for best flavor.
  • To store, ensure pizzelle are completely cooled to maintain crispness.
