Instructions
- Cook the vegetables: In a large skillet set over medium heat, melt the unsalted butter. Add the chopped onions and green bell peppers, cooking them until they soften, about 6 to 7 minutes, stirring frequently to avoid browning.
- Cook the beef: Add the ground beef to the skillet and break it up into small pieces with a wooden spoon. Cook until the meat is thoroughly browned, about 5 to 6 minutes.
- Make it saucy: Stir in the beef stock, ketchup, Worcestershire sauce, garlic powder, kosher salt, and freshly ground black pepper. Reduce the heat to low and simmer the mixture for 4 to 5 minutes until it thickens.
- Prepare the cheese: Stack 6 slices of provolone cheese on a cutting board and cut them into 1/2-inch pieces using a chef’s knife. Stir these cut pieces into the meat mixture right before serving to gently melt the cheese.
- Assemble the sloppy joes: Toast the brioche buns using a toaster or toaster oven. Place one slice of the remaining 6 provolone cheese slices on each bun half, then spoon generous amounts of the sloppy joe mixture over the cheese. Top with the other bun half and serve warm.
