Instructions
- Prepare Baking Sheet: Line a large baking sheet with parchment paper and set it aside for later use to place the cookies once formed.
- Set Cereal Aside: Pour the cornflake cereal into a large bowl and set it aside to be mixed later with the peanut butter mixture.
- Heat Syrups: In a medium saucepan, combine the light corn syrup and maple syrup. Warm over medium-low heat, stirring occasionally, until the mixture becomes slightly bubbly, about 3-4 minutes.
- Add Sugar and Vanilla: Turn off the heat and stir in the white granulated sugar and vanilla extract thoroughly until well combined.
- Incorporate Peanut Butter: Using a rubber spatula, mix the creamy peanut butter into the syrup mixture. The mixture will become very sticky and thick.
- Combine with Cornflakes: Pour the sticky peanut butter mixture over the cornflakes in the large bowl. Mix well to evenly coat the cereal.
- Form Cookies: Working quickly to prevent the mixture from setting, use a 1½ tablespoon cookie scoop or tablespoon to drop cookie-sized portions onto the prepared parchment-lined baking sheet.
- Set Cookies: Allow the cookies to set at room temperature for 10-15 minutes until firm. Once set, they are ready to serve.
