  • 1 cup pitted Medjool dates (about 15 dates)
  • 1 cup oats
  • 1/4 cup ground flax seeds
  • 1/4 cup shredded coconut
  • 1/2 cup peanut butter (creamy or natural)
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Your favourite jam (about 15 tsp dollops)

Instructions

  1. Prepare jam dollops: Line a baking pan with parchment paper and place about 15 small dollops (about 1 tsp each) of your favourite jam spaced evenly on the pan.
  2. Freeze the jam: Place the pan in the freezer for at least 2 hours to let the jam firm up and become easier to handle.
  3. Blend the base mixture: In a food processor, combine the pitted Medjool dates, oats, ground flax seeds, shredded coconut, peanut butter, vanilla extract, cinnamon, and a pinch of salt. Blend until all ingredients are combined into a sticky mixture that holds together when pressed between your fingers. Add a few more dates if it is too dry.
  4. Form the dough disks: Using your hand, scoop out portions of the dough and flatten each into a disk shape big enough to encase a jam dollop.
  5. Add jam centers: Remove the jam dollops from the freezer and place one frozen jam dollop in the center of each dough disk.
  6. Seal and shape balls: Fold up the edges of the dough disk around the jam, sealing the jam inside like folding a dumpling. Roll the sealed dough gently between your hands to form a smooth ball.
  7. Repeat for all energy balls: Continue this process until all dough and jam dollops are used.
  8. Store: Place the finished energy balls in an airtight container and keep refrigerated until ready to serve.

  • Use natural or creamy peanut butter based on preference. Avoid crunchy for smoother texture.
  • If the dough feels too dry, add extra dates to help bind the mixture.
