Broccoli Fritters
- 3 cups broccoli florets and stem, roughly chopped into 2cm (1 inch) pieces (about 1 medium head of broccoli)
- 2 tbsp oil (vegetable, olive, or canola)
- 1 garlic clove, minced
- 1/2 cup plain flour
- 1/4 cup grated parmesan
- 1 egg
- 2 tbsp milk (low fat or full fat)
- 1/2 tsp salt
- Black pepper, to taste
Yoghurt Sauce
- 1/4 cup plain yoghurt
- 2 tsp lemon juice
- Salt and pepper, to taste
Instructions
- Cook the broccoli: Steam or boil the broccoli until quite tender but not mushy. Using a microwave steamer, this takes about 3 minutes on high.
- Prepare the broccoli: Use a potato masher to roughly crush the broccoli. The goal is to break it down slightly so that the fritters have a smooth surface without large lumps.
- Make the yoghurt sauce: Combine the plain yoghurt, lemon juice, salt, and pepper in a small bowl and mix well. Set aside.
- Make the batter: In a bowl, lightly beat the egg with a fork. Add the minced garlic, plain flour, grated parmesan, milk, salt, and black pepper to the egg and mix until combined. The batter will be thick but will loosen after adding broccoli.
- Add broccoli to batter: Mix in the crushed broccoli thoroughly, ensuring even distribution and that the batter loosens slightly with released liquid.
- Heat the oil: Heat 1 tablespoon of oil in a frying pan over medium heat.
- Form and cook fritters: Scoop 1/4 cup of batter and drop into the pan. Use a spoon to gently flatten each fritter to about 1 cm (1/3 inch) thickness. Cook 3 fritters at a time.
- Fry until golden: Cook each side for 2 to 3 minutes or until golden brown and cooked through. Repeat with remaining batter, adding oil as needed.
- Serve: Serve the warm broccoli fritters with the prepared yoghurt sauce and optional extra lemon wedges for squeezing.
Notes
- Use both florets and stems of broccoli for best texture and flavor.
- Do not overcook broccoli to avoid mushy fritters.
- Adjust seasoning to taste, especially salt and pepper.
