  • Total Time: 15 minutes

Description

Delicious and easy-to-make no-bake peanut butter chocolate cookies that combine creamy peanut butter, rich cocoa, and hearty oats into a sweet treat without the need for an oven. Perfect for quick dessert cravings or an anytime snack.

Ingredients

Scale

Main Ingredients

  • 1 stick butter (113 grams)
  • 1⅔ cups sugar (330 grams)
  • ½ cup milk (120 ml)
  • ¼ cup cocoa powder (25 grams)
  • 1 cup peanut butter (260 grams)
  • 2 tsp vanilla extract (10 ml)
  • 3 cups quick cook oats (255 grams)
  • ¼ tsp salt (1.5 grams)

Instructions

  1. Prepare Oats: In a large bowl, stir together the quick cook oats and salt until evenly combined. Set this mixture aside while you prepare the chocolate mixture.
  2. Combine Wet Ingredients: In a small saucepan over medium-high heat, whisk together the butter, sugar, milk, and cocoa powder until smooth and uniform in texture.
  3. Boil the Mixture: Bring the saucepan mixture to a rolling boil and maintain it for about one minute to ensure the sugar dissolves completely and the mixture thickens slightly. Then immediately remove from heat to prevent burning.
  4. Add Peanut Butter and Vanilla: Quickly whisk in the peanut butter and vanilla extract until fully combined and the mixture is smooth with no lumps.
  5. Combine with Oats: Pour the warm peanut butter chocolate mixture over the oats and salt mixture. Stir well until all the oats are evenly coated with the chocolate peanut butter mixture.
  6. Form Cookies: Line a baking sheet with wax paper. Using a medium cookie scoop or spoon, drop dollops of the cookie mixture onto the wax paper, spacing them evenly.
  7. Cool and Set: Allow the cookies to cool at room temperature until they firm up. Once cool and fully set, store them in the refrigerator to keep fresh and enjoy.

Notes

  • Use quick cook oats for the best texture and easier mixing.
  • Make sure to whisk the chocolate mixture continuously to avoid burning.
  • Cookies firm up as they cool; refrigeration helps them hold shape longer.
  • To vary the recipe, try adding chopped nuts or shredded coconut.
  • These cookies do not require baking, making them perfect for a quick dessert or snack.
