Instructions

  1. Prepare the Pan: Line an 8×8-inch pan with tin foil, making sure the foil extends over the sides to help lift the bars out later.
  2. Make the Base Mixture: In a large microwave-safe bowl, combine 1/2 cup butter, 1/4 cup sugar, and 1/3 cup cocoa powder. Microwave on high for 45 seconds, stir, then microwave for another 20–30 seconds if needed until fully melted and combined.
  3. Add Egg and Dry Ingredients: Let the melted mixture cool for 5 minutes. Quickly whisk in 1 egg; the mixture will thicken. Stir in 2 cups graham cracker crumbs and 3/4 cup shredded coconut until fully combined.
  4. Press Base into Pan: Press this mixture evenly into the prepared pan to form the base layer.
  5. Prepare the Mint Filling: Using an electric mixer, beat 1/4 cup butter until smooth. Add 2 cups powdered icing sugar and 2 tablespoons milk and continue beating until smooth. Adjust the consistency with a little more milk or sugar if needed. Add 1 teaspoon mint extract and green food coloring to desired shade, mixing well.
  6. Spread the Filling: Evenly spread the mint filling over the chocolate base in the pan.
  7. Make the Ganache Topping: In a medium microwave-safe bowl, combine 2/3 cup chocolate chips or chopped chocolate and 2 tablespoons butter. Microwave in 20-second intervals on high, stirring in between, until smooth and fully melted.
  8. Pour Ganache over Filling: Pour the smooth chocolate ganache over the mint filling, spreading it evenly.
  9. Chill to Set: Refrigerate the bars for at least 2 to 3 hours until completely set.
  10. Serve and Store: Remove from pan by lifting the foil, slice into bars, and serve. Store leftovers covered in the refrigerator or freeze for up to a few months.
