Ingredients
Scale
Pie Crust
- 1 graham cracker pie crust
Filling
- 14 oz can sweetened condensed milk
- 1 lime (zest and juice, about 2 ½ tablespoons)
- 15 oz can crushed pineapple, drained well (reserve more for topping if desired)
- 2/3 cup chopped Maraschino cherries
- 2 Tablespoons maraschino cherry juice
- 1 cup sweetened shredded coconut flakes
- ½ cup chopped pecans
- 4 oz cream cheese, softened
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (for filling)
Topping
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- Maraschino cherries (for garnish)
Instructions
- Mix Cream Cheese and Cream: Beat the softened cream cheese in a bowl until smooth. Gradually add 1 cup of heavy whipping cream along with the coconut and vanilla extracts. Whip this mixture until medium to stiff peaks form, being careful not to overmix.
- Prepare Millionaire Pie Filling: In a separate large bowl, combine the sweetened condensed milk with the lime juice and zest. Stir until fully incorporated. Then add the well-drained crushed pineapple, chopped maraschino cherries, maraschino cherry juice, shredded coconut flakes, and chopped pecans. Gently fold in the whipped cream and cream cheese mixture until everything is combined evenly.
- Assemble Pie: Pour the prepared filling into the graham cracker pie crust and smooth the top into an even layer with a spatula.
- Chill: Refrigerate the pie for several hours, at least 3-4 hours or preferably overnight, so that it sets properly and the flavors meld beautifully.
- Prepare and Add Topping: Before serving, whip 1 cup heavy whipping cream with the powdered sugar until stiff peaks form. Either pipe or spread this whipped topping evenly over the chilled pie. Garnish with additional maraschino cherries according to preference.
Notes
- Be sure to drain the crushed pineapple thoroughly to avoid a watery filling.
- This pie is best made a day ahead to allow the flavors to fully develop and the filling to set well.
- Use fresh lime juice and zest for the best citrus flavor.
- Adjust sweetness by varying the amount of condensed milk or cherries according to taste.
- Keep the pie refrigerated until serving to maintain its texture and freshness.
