Middle Eastern Flatbread Recipe

  • Author: Aiden
  • Total Time: 45 minutes
  • Yield: 10 flatbreads 1x
  • Diet: Halal

Description

This Middle Eastern Flatbread recipe combines all-purpose and whole wheat flours with olive oil, yeast, and warm milk to create soft, flavorful flatbreads. Cooked on a stovetop in a non-stick pan, these breads are perfect for serving alongside dips, herbs, or grilled meats. The dough rests to develop texture, then is rolled thin or thick depending on your preference, yielding 10 soft, pliable flatbreads.

Ingredients

Scale

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup olive oil
  • 1 cup warm milk
  • 1/2 cup warm water (adjust as needed)

Instructions

  1. Mix Dry Ingredients: In your mixer bowl, combine all the dry ingredients, including the flours, yeast, sugar, and salt. Mix well to evenly distribute the yeast and seasoning.
  2. Add Wet Ingredients and Knead Dough: Add the olive oil and warm milk to the dry mixture. Begin kneading and gradually add warm water until you achieve a firm dough that is not sticky. Adjust water quantity as needed for the right consistency.
  3. Rest the Dough: Cover the dough and let it rest for 30 minutes to allow the yeast to activate and the dough to rise slightly, improving texture and flavor.
  4. Divide and Roll: Cut the dough into 10 equal pieces. Roll each piece into a circle about 1/4 inch thick, adjusting thickness according to your preference for thinner or thicker flatbreads.
  5. Cook on Stovetop: Heat a non-stick pan over medium heat. Place one flatbread in the pan and cook for about 1 to 1 1/2 minutes until bubbles form and the underside is golden. Flip and cook the other side similarly.
  6. Repeat Cooking: Continue cooking the remaining flatbreads one by one, ensuring each is cooked evenly on both sides.
  7. Keep Flatbreads Soft: Stack the cooked flatbreads on top of each other and cover with a kitchen towel. This traps steam and keeps them soft and pliable until served.

Notes

  • Adjust the amount of warm water as needed to get a firm but non-sticky dough.
  • Flatbreads can be rolled thinner for crispier breads or thicker for softer texture.
  • Use a non-stick pan to prevent sticking and ensure even cooking.
  • Covering with a kitchen towel after cooking keeps flatbreads moist and soft.
  • These flatbreads can be served with dips such as hummus or baba ganoush, or used as wraps for meats and vegetables.
