Instructions
- Sift Dry Ingredients: Sift together the plain flour, matcha powder, and baking powder to ensure even distribution and a light texture. Add the almond meal to this dry mixture and mix well.
- Combine Wet Ingredients: In a separate bowl, whisk together the eggs, sugar, and honey thoroughly without incorporating too much air, to create a smooth mixture.
- Incorporate Dry Ingredients: Gently fold the sifted dry ingredients into the egg mixture, stirring carefully to combine without deflating the batter.
- Add Melted Butter: Gradually add the melted butter in thirds into the batter, mixing well after each addition until fully incorporated into a smooth, glossy batter.
- Chill Batter: Cover the batter and refrigerate it for at least 2 hours to allow it to firm up, which helps in achieving the characteristic shell shape and texture.
- Prepare Bakeware: Grease the madeleine tin with the 1 tsp melted butter and lightly dust it with plain flour to prevent sticking, tapping out any excess flour.
- Bake: Preheat the oven to 180°C (356°F). Spoon the chilled batter into the prepared madeleine molds, filling each about 3/4 full. Bake in the preheated oven for 15 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
- Cool and Serve: Remove the madeleines from the oven and immediately pop them out of the tin. Cool on a wire rack. Once cooled slightly, dust with confectioners sugar before serving.
