Ingredients
Scale
Sun-Dried Tomato Sauce
- 5 oz. sun-dried tomatoes in oil, divided
- 2 tbsp. extra-virgin olive oil
- 3 garlic cloves, minced
- 1 tsp. kosher salt, divided
- 1 cup heavy cream
- 2 tbsp. finely chopped fresh basil leaves, plus more for serving
- 2 tsp. finely chopped fresh thyme leaves
- 1/4 tsp. crushed red pepper flakes
- 1 oz. Parmesan, finely grated (about 1/2 cup), plus more for sprinkling
Pizza
- 16 oz. store-bought or homemade pizza dough
- 2 oz. mozzarella, shredded
- 4 oz. rotisserie chicken, shredded
Instructions
- Preheat Oven and Prepare Tomatoes: Arrange a rack in the lower third of your oven and preheat it to 550°F. Finely chop 4 oz. of the sun-dried tomatoes. Slice the remaining 1 oz. into bite-sized pieces and set aside for garnish and serving.
- Cook Garlic and Tomatoes: In a large skillet over medium heat, warm the olive oil. Add the chopped sun-dried tomatoes and minced garlic, stirring until the garlic softens and the tomatoes start breaking down, about 3 minutes. Season with 1/2 teaspoon kosher salt.
- Make the Cream Sauce: Add the heavy cream, chopped basil, thyme, and crushed red pepper flakes to the skillet. Bring the mixture to a simmer, reducing the heat to medium-low if it starts to boil. Cook, stirring occasionally, until the sauce thickens and reduces to coat the back of a spoon, approximately 5 to 6 minutes. Remove from heat and stir in the grated Parmesan until smooth. Let the sauce cool slightly.
- Prepare the Pizza Dough: Stretch the pizza dough into a 12- to 14-inch diameter round. Place it on a round pizza pan or a large baking sheet. Spread the cooled sun-dried tomato cream sauce evenly over the dough, leaving a 1/2- to 1-inch border around the edges.
- Add Toppings: Sprinkle the shredded mozzarella evenly over the sauce. Then top the pizza with the shredded rotisserie chicken.
- Bake the Pizza: Place the pizza in the oven and bake until the bottom and edges turn golden brown and the cheese is melted and bubbly, about 5 minutes.
- Finish and Serve: Remove the pizza from the oven and top with the reserved sliced sun-dried tomatoes, additional fresh basil leaves, and a sprinkle of Parmesan cheese. Slice and serve immediately.
Notes
- Use fresh herbs for the best flavor, but dried can be substituted in a pinch (reduce quantity).
- If your oven does not reach 550°F, bake at the highest possible temperature and increase baking time slightly.
- For added texture and flavor, you can add a drizzle of balsamic glaze before serving.
- Leftover pizza can be stored in the refrigerator for up to 3 days and reheated in a skillet or oven to maintain crispiness.
