Description

Loaded Tater Tot Nachos combine crispy, golden tater tots layered with savory seasoned ground beef, melted cheddar cheese, smoky bacon, and fresh toppings like tomatoes and green onions, finished with a dollop of sour cream for a deliciously satisfying appetizer or snack.

Ingredients

Scale

Main Ingredients

  • 1 (32 ounce) bag Tater Tots
  • 2 cups shredded cheddar cheese
  • 6 slices cooked and crumbled bacon
  • 8 ounces lean ground beef (optional, or 2 cups leftover taco meat)
  • 1 tablespoon taco seasoning (optional)
  • 1 cup diced fresh tomatoes
  • 4 green onions, sliced
  • ½ cup sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 450°F to ensure it’s hot enough to make the tater tots nice and crispy.
  2. Cook Ground Beef: If using ground beef, heat a medium skillet over medium-high heat. Add the beef and cook, breaking it up with a spoon, until it is fully browned and no pink remains. Drain any excess fat to keep the dish from becoming greasy.
  3. Season Beef: Stir in the taco seasoning along with ¼ cup of water. Let it simmer uncovered for 4 to 5 minutes, allowing the flavors to meld and the water to evaporate.
  4. Bake Tater Tots: Line a large baking pan with parchment paper. Spread the tater tots in a single layer and bake for 20 minutes, turning them halfway through at 10 minutes to ensure even crispness.
  5. Add Toppings and Cheese: Remove the tots from the oven and evenly sprinkle the cooked bacon, beef (if using), and shredded cheddar cheese over them. Return to oven and bake an additional 5 minutes until the cheese is melted and bubbly.
  6. Finish and Serve: Take the loaded tots out of the oven and top with fresh diced tomatoes, sliced green onions, and dollops of sour cream. Serve immediately while hot and enjoy!

Notes

  • You can omit the ground beef to make this vegetarian by using just the taco meat substitute or extra veggies.
  • For extra spice, add jalapeño slices on top before the final bake.
  • Use a non-stick spray or parchment paper to prevent sticking and make cleanup easier.
  • Leftover taco meat can be used instead of ground beef to save prep time.
  • Serve with salsa or guacamole for additional flavor options.
