Ingredients
Scale
Ganache
- 1/3 cup Heavy cream
- 1 tbsp Unsalted butter
- 7 oz ChocZero Sugar-Free Dark Chocolate Chips (1 bag)
- 1 tsp Vanilla extract
Coatings (optional)
- Dutch processed cocoa powder (preferably Dutch processed)
- Melted ChocZero Sugar-Free Dark Chocolate Chips
- Finely chopped hazelnuts
- Shredded coconut
- Besti Powdered Monk Fruit Allulose Blend
Instructions
- Prepare the chocolate: Place the ChocZero sugar-free dark chocolate chips into a small bowl and set it aside to be melted by the hot cream mixture.
- Heat the cream and butter: In a small 1-quart saucepan on the stove, combine the heavy cream and unsalted butter. Warm the mixture over medium heat until the butter melts and the cream just barely starts to simmer. Be careful not to boil.
- Add vanilla extract: Remove the saucepan from heat and stir in the vanilla extract for enhanced flavor.
- Create the ganache: Immediately pour the hot cream and butter mixture over the chocolate chips. Let it sit untouched for 3-5 minutes to allow the chocolate to melt fully, then stir gently until smooth and glossy—this is your rich chocolate ganache.
- Chill the ganache: Pour the ganache into a small rectangular glass meal prep dish. Refrigerate it for about 2 hours until it becomes thick and semi-firm to the touch—no longer shiny and no sticking to your fingers, but not rock hard.
- Prepare the work surface: Line a 10×15 jelly roll pan with parchment paper and refrigerate it alongside the ganache to keep it cold.
- Form the truffles: Wash your hands with cold water to cool them. Use a small cookie scoop to portion out the chocolate mixture quickly. Shape into balls by gently rolling between your fingers, then place them on the chilled parchment-lined pan. Avoid over-handling or letting them melt.
- Coat the truffles: Roll each truffle in your choice of coating such as Dutch processed cocoa powder, melted sugar-free chocolate, finely chopped hazelnuts, shredded coconut, or Besti powdered monk fruit blend for variety.
- Store and serve: Keep the truffles refrigerated until ready to eat. Before serving, let them sit at room temperature for a few minutes to soften slightly for the best texture.
Notes
- Use cold water to cool your hands before shaping the truffles, which helps prevent melting.
- If the ganache becomes too firm after refrigeration, let it soften briefly at room temperature before scooping.
- Experiment with different coatings to add varied flavors and textures.
- Store truffles in an airtight container in the refrigerator for up to 1 week.
- For a firmer texture, chill truffles longer; for a softer bite, reduce chilling time slightly.
