- 1/2 tbsp Cajun seasoning
- 1/8 tsp salt
- Black pepper, to taste
- 1 tablespoon olive oil
Shrimp Salad Dressing
- 2 tbsp mayonnaise
- 2 tbsp sour cream (full fat or low fat)
- 1 tablespoon cilantro leaves, chopped
- 1/2 teaspoon lime juice
- A pinch of salt and black pepper
Other
- 2 Hass avocados
- Optional garnish: chopped scallions or cilantro
- Optional lime wedges for serving
Instructions
- Cook the Shrimp: Heat the olive oil in a pan over high heat. Add the shrimp immediately, then season with Cajun seasoning and salt. Cook for 3-4 minutes, stirring frequently until the shrimp are opaque and cooked through. Remove from heat and set aside.
- Chop the Shrimp: Once the shrimp have cooled slightly, cut each shrimp into 4-5 small pieces to make the filling easier to mix and eat.
- Prepare Shrimp Salad: In a large bowl, combine mayonnaise, sour cream, chopped cilantro, lime juice, and a pinch of salt and black pepper. Stir thoroughly to create a creamy dressing. Add the chopped shrimp to the bowl and mix well to coat the shrimp evenly.
- Assemble the Avocado Boats: Cut the avocados in half and carefully remove the pits. Spoon the shrimp salad mixture generously into each avocado half. Garnish with additional chopped cilantro or scallions as desired. Serve immediately or chill in the refrigerator for about 5 minutes. Serve with lime wedges on the side for extra zest.
