- 1/2 cup chicken stock or broth, plus more as needed
- 1/2 cup plain breadcrumbs
- 3 tablespoons unsalted butter, cubed
Instructions
- Prepare the Dough: In a large bowl, whisk together the all-purpose flour, kosher salt, granulated sugar, Jamaican curry powder, and turmeric powder until combined. Add the grated unsalted butter and use your hands to pinch and mix the butter into the dry ingredients until the mixture resembles little pea-sized bits coated in flour.
- Add Water and Knead: Make a small well in the center of the flour-butter mixture and pour in the ice-cold water. Use your hands to bring everything together, then transfer the mixture onto a clean surface and knead the dough by repeatedly folding and squeezing it until a cohesive ball forms with no dry flour remaining.
- Chill the Dough: Shape the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes to firm up.
