- Whip the Cream: In a large bowl, use a hand mixer or a stand mixer fitted with a whisk attachment to beat the cold heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. This mixture will be the luscious filling and binder for your icebox cake.
- Layer Cookies and Cream: Spread a very thin layer of the whipped cream mixture onto the bottom of an 8-inch springform pan. Then arrange an even layer of about 16 whole Oreo cookies or wafers on top. Spread another layer of whipped cream over the cookies, and continue layering the cookies and whipped cream until you have four layers of cookies in total.
- Top and Chill: After the final layer of cookies, spread a generous layer of whipped cream over the top. Cover and refrigerate the cake for at least 4 hours, or overnight, allowing the cookies to soften and meld with the cream into a cake-like texture.
