Instructions

  1. Preheat Oven: Preheat your oven to 200°C / 400°F (180°C fan-forced) to prepare for baking the crackers.
  2. Mix Dry Ingredients: In a mixing bowl, combine the flour, 1 tbsp sesame seeds, and 1/4 tsp kosher salt using a rubber spatula or wooden spoon.
  3. Add Wet Ingredients: Make a well in the center of the dry mix, then add the water and 2 tbsp olive oil. Stir with the handle of the spatula until the flour is incorporated and a dough forms.
  4. Form Dough and Divide: Lightly flour your counter and scrape out the dough. Knead a few times to bring it together into a ball, then cut the dough in half.
  5. Roll Out Dough #1: Roll one half of the dough to a 3mm (1/8 inch) thick oval shape on the floured surface.
  6. Prepare for Toppings: Transfer the rolled dough onto a sheet of baking/parchment paper laid on a cutting board.
  7. Sprinkle Toppings and Roll Thin: Sprinkle half the remaining sesame seeds and salt flakes evenly over the dough on the paper. Roll out even thinner to about 2mm (1/12 inch) thickness; thinner dough yields crispier crackers.
  8. Cut Crackers: Use a pizza cutter or knife to cut the dough into roughly 5cm (2 inch) squares. Leave smaller irregular pieces at the edges as is; do not move pieces to avoid breakage.
  9. Transfer to Tray: Slide the parchment with cut dough squares onto a baking tray. Repeat the same rolling, topping, and cutting process with the second half of the dough on another tray.
  10. Prepare for Baking: Spray the crackers lightly with olive oil spray to ensure a golden color and crispness.
  11. Bake First Phase: Bake both trays in the preheated oven for 12 minutes.
  12. Rearrange for Even Baking: Remove trays and rearrange pieces by moving the darker, more golden crackers from the outer rim of the tray toward the center to ensure even baking.
  13. Bake Second Phase: Return trays to the oven and bake for an additional 8 to 10 minutes, or until all crackers are light golden and fully crisp.
