Instructions

  1. Grind Nuts and Seeds: In a food processor, combine the cashews, walnuts, salt, cinnamon, chia seeds, and hemp seeds. Pulse until the mixture is very finely ground, creating a uniform nut and seed powder.
  2. Make the Truffle Dough: Add the pitted dates, almond butter, and vanilla extract to the ground nuts and seeds. Process until the mixture forms a sticky, cohesive dough. This may take several minutes and you may need to stop and stir the mixture to ensure everything is well combined.
  3. Shape the Truffles: Roll the dough into 20 equal-sized balls. Place the balls on a parchment-lined plate or baking dish. Freeze the balls for 1 hour to firm them up for dipping.
  4. Melt the Chocolate Coating: While the truffles chill, place the chopped dark chocolate in a microwave-safe bowl. Microwave in 30-second increments, stirring after each, until fully melted and smooth, which should take about 1 1/2 minutes. Stir in the coconut oil until combined and silky.
  5. Coat the Truffles: Using a fork, dip each chilled truffle ball into the melted chocolate, allowing the excess to drip off. Quickly sprinkle with dried rosebuds before the chocolate sets. Repeat this process for all truffles.
