Instructions

  1. Preheat and prepare salmon: Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and place the 2 pounds of Atlantic salmon on top. Sprinkle the salmon evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Fold up the sides of the foil around the salmon to create a pouch.
  2. Make the glaze: In a small bowl, whisk together 2 tablespoons olive oil, 1/4 cup brown sugar, 1/4 cup soy sauce, 3 minced garlic cloves, the juice of one lemon, 1 teaspoon salt, and 1/2 teaspoon pepper until well combined.
  3. Apply glaze and seal: Pour the prepared glaze evenly over the salmon inside the foil pouch. Cover the salmon with another sheet of aluminum foil and seal the edges to trap the marinade and juices inside.
  4. Bake the salmon: Place the foil-sealed salmon on the baking sheet in the preheated oven. Bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Baste and broil: Carefully remove the top layer of foil and baste the salmon with the sauce that has collected inside the foil. Switch your oven to broil and broil the salmon for 3-5 minutes until the glaze is bubbly, browned, and caramelized, watching closely to prevent burning.
  6. Garnish and serve: Remove from oven, garnish with sliced lemons and chopped parsley if desired, and serve immediately for best flavor and presentation.
