  • Yield: Approximately 20-24 bites 1x
  • Diet: Vegetarian

Description

These Frozen Greek Yogurt Bites with Cookie Butter are a delightful, easy-to-make frozen treat combining creamy Greek yogurt, crunchy cookie butter, fresh blueberries, and a rich chocolate coating. Perfect for a healthy dessert or snack, these bites offer a delicious mix of flavors and textures with a salty-sweet finish.

Ingredients

Scale

Yogurt Filling

  • 1 cup plain full fat Greek yogurt
  • ½ cup crunchy cookie butter (or your favorite nut butter, warmed in microwave for 1520 seconds to be pourable)
  • 1 cup fresh blueberries

Chocolate Coating

  • 2 cups semi-sweet chocolate chips
  • 2 Tbsp canola oil (or coconut oil)

Finishing

  • Flaky sea salt (for serving)

Instructions

  1. Make the yogurt filling: In a mixing bowl, combine 1 cup plain full fat Greek yogurt with ½ cup warmed crunchy cookie butter. Stir thoroughly until well blended. Gently fold in 1 cup fresh blueberries to incorporate them evenly without breaking them.
  2. Freeze the yogurt bites: Use a standard cookie scoop to portion the yogurt mixture onto a parchment-lined baking sheet into equal-sized bites. Place the baking sheet in the freezer and freeze until solid, about 2 hours.
  3. Temper the chocolate: Place 2 cups semi-sweet chocolate chips and 2 tablespoons of canola oil (or coconut oil) into a microwave-safe bowl. Heat in 20-30 second intervals, stirring well between each session, until the chocolate is completely melted and smooth.
  4. Coat in chocolate, then freeze: Remove the frozen yogurt bites from the freezer. Quickly dip each bite into the melted chocolate to coat evenly, then immediately sprinkle with flaky sea salt. Return the chocolate-coated bites to the freezer for at least 10-15 minutes to set the chocolate. Store leftover bites in the freezer for up to 2 weeks for best freshness.

Notes

  • For best dipping results, work quickly to prevent the yogurt from melting while coating with chocolate.
  • Using cookie butter provides a unique flavor, but nut butters like peanut or almond butter can be substituted.
  • You can adjust the sweetness by choosing your preferred type of chocolate chips.
  • Ensure blueberries are fresh and firm to avoid excess water content that could affect freezing.
  • Store bites in an airtight container in the freezer to maintain freshness.
