Ingredients
Scale
Fudge Base
- 3 cups (621g) granulated sugar
- 3/4 cups (170g) unsalted butter
- 2/3 cup (160ml) evaporated milk
- 12 ounces semi-sweet chocolate (chocolate chips or baking bar)
- 7 ounces marshmallow fluff
- 1 teaspoon vanilla extract
Optional Add-ins
- 1 cup (112g) chopped walnuts
Instructions
- Prepare the Pan: Line a 9×13-inch pan with parchment paper, allowing the paper to extend above the edges of the pan. This makes it easy to lift out the fudge once set.
- Combine Ingredients: In a large saucepan over medium heat, add the granulated sugar, unsalted butter, and evaporated milk. Stir consistently with a wooden or silicone spatula until the butter is fully melted and the sugar is dissolved.
- Cook the Mixture: Bring the mixture to a boil, stirring constantly to prevent burning. Keep it boiling and stirring until the mixture reaches 234°F (soft-ball stage) on a candy thermometer; this should take about 4-5 minutes.
- Add Chocolate: Remove the saucepan from the heat. Stir in the semi-sweet chocolate until completely melted and fully combined into the creamy mixture.
- Mix in Remaining Ingredients: Add the marshmallow fluff, chopped walnuts (if using), and vanilla extract. Stir these ingredients vigorously until the fudge mixture is smooth and well incorporated.
- Set the Fudge: Pour the fudge into the prepared pan, smoothing the top with a spatula if needed. Let it sit at room temperature for approximately 4 hours to firm up. For quicker setting, place it in the refrigerator.
- Serve: Once firm, lift the fudge out using the parchment paper edges, slice into squares, and serve at room temperature for the best texture and flavor.
Notes
- Using a candy thermometer ensures the fudge reaches the precise temperature for proper setting.
- If you prefer nut-free fudge, omit the walnuts.
- Allow fudge to come to room temperature before serving for a creamy texture; refrigeration firms it but can make it harder.
- Store fudge in an airtight container at room temperature or in the fridge for up to two weeks.
- For a different flavor twist, consider adding a pinch of sea salt on top before setting.
