- Whisk the batter: In a large bowl, combine 1 cup of all-purpose flour, 1 cup of whole milk, 3 large eggs, and 1 ½ teaspoons of salt. Whisk the ingredients thoroughly until fully combined and smooth. Set the batter aside and let it rest for 20 minutes to develop the texture.
- Prepare the oven and pan: Preheat your oven to 450 degrees Fahrenheit. Remove all oven racks except the one at the very bottom to ensure the pan is close to the heat source.
- Heat the fat in the pan: Pour ¼ cup of butter or your choice of drippings into a 10-inch skillet or evenly divide it among a 12-cup muffin pan placed on a large baking sheet. Place the pan in the oven and bake for 5 minutes until the fat is very hot and sizzling.
- Pour in the batter: Carefully remove the heated skillet or muffin pan from the oven. Whisk the batter again briefly to ensure it’s well mixed, then pour all of it into the hot skillet or distribute it evenly between the muffin cups.
- Bake the puddings: Return the pan to the oven and bake for about 25 minutes, or until the Yorkshire puddings puff up dramatically and develop a beautiful golden-brown color. Do not open the oven during baking to prevent collapse.
