Made with just a few ingredients including gluten free flour and Greek yoghurt, this flatbread can be customized with sundried tomatoes and olives for added flavor. - 350g gluten free plain flour
- 2 tsp baking powder
- 1 tsp fine salt
Wet Ingredients
- 300ml full fat natural or plain Greek yoghurt
Optional Add-ins
- 8 sundried tomatoes, finely sliced
- 50g green olives, finely sliced
Instructions
- Combine Ingredients: Add the gluten free flour, baking powder, and Greek yoghurt to a large bowl. Begin mixing with a wooden spoon to roughly combine the ingredients.
- Knead the Dough: Use your hands to knead the mixture until a pliable dough forms. Adjust the consistency by adding a little water if too dry or more flour if too wet.
- Add Optional Flavors: If desired, fold in the finely sliced sundried tomatoes and green olives, ensuring they are evenly distributed throughout the dough.
- Shape Flatbreads: Lightly flour a board and rolling pin. Divide the dough into six portions, roll each into a ball, then flatten to about 5mm thickness using the rolling pin or your hands for a more rustic look.
- Cook on Griddle Pan: Heat a griddle pan over medium-low heat. Optionally spritz with a little olive oil for a golden finish or cook dry. Place the flattened dough on the pan and cook for 3-5 minutes on each side until risen and cooked through.
- Repeat and Serve: Continue rolling and cooking each portion until all flatbreads are done. Serve warm immediately or reheat quickly in the microwave before serving.

- For a crispier crust, you can add a small amount of olive oil to the griddle pan before cooking.
