  • 2 tablespoons butter
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 2 teaspoons Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 1 28-ounce can whole peeled tomatoes
  • 4 cups (32 oz) chicken stock

Other Ingredients

  • 1 bag Success Boil-in-Bag Jasmine Rice, or 1 heaping cup cooked rice
  • ¾ cup half & half or heavy cream
  • ¼ cup fresh basil, chopped
  • Fresh parmesan cheese, for serving
  • Ricotta cheese, for serving

Instructions

  1. Sauté Aromatics: In a large pot or Dutch oven over medium heat, melt the butter. Add diced onion, minced garlic, and Italian seasoning. Cook, stirring occasionally, until the onion is translucent and the mixture is fragrant, about 5 minutes. Season with salt and black pepper to taste.
  2. Simmer Soup: Pour in the whole peeled tomatoes and chicken stock. Stir to combine. Bring the mixture to a boil, then cover, reduce the heat to low, and let it simmer gently for 30 minutes to meld the flavors.
  3. Blend Soup: Remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth and thick in consistency, eliminating chunks of tomato and onion.
  4. Add Cream and Rice: Stir in the half & half (or heavy cream), fresh chopped basil, and the cooked jasmine rice. Mix thoroughly to combine the creaminess and the rice evenly throughout the soup.
  5. Serve: Ladle the soup into bowls and garnish each serving with extra fresh basil, freshly grated parmesan, and a spoonful of ricotta cheese for a creamy, flavorful finish. Enjoy warm.

Notes

  • You can substitute cooked jasmine rice for the boil-in-bag rice if desired.
