Instructions
- Brown the sausage and onions: In a skillet, add the Italian sausage meat and chopped onions. Sauté over medium heat for about 7-8 minutes, breaking up the sausage with a spoon until browned and cooked through. If there’s excess fat, spoon some out to reduce grease.
- Sauté garlic and transfer to crockpot: Stir in the minced garlic and cook for about 30 seconds until fragrant. Then transfer the sausage, onion, and garlic mixture into your Crockpot.
- Add vegetables and tomatoes to crockpot: Add the sliced or chopped carrots, finely chopped celery, crushed tomatoes, diced tomatoes with juices, and chicken broth to the Crockpot. Consider the size of the carrot pieces based on your cooking time: finely chopped for 3-4 hours cooking, or larger pieces for 7-8 hours low or 4-5 hours high.
- Cook the soup: Cover and cook on low for 7-8 hours or on high for 4-5 hours, allowing the flavors to develop and vegetables to soften.
- Add tortellini, cream, and spinach: About 30 minutes before serving, add the refrigerated cheese tortellini, heavy cream (if using), and fresh baby spinach to the Crockpot. Increase the heat to high and stir occasionally to prevent sticking.
- Season and serve: Taste the soup and season with salt and pepper as needed. Serve hot and enjoy your warm, flavorful tortellini soup.
