Ingredients
Scale
Chicken
- 2 pounds boneless skinless chicken breasts
- 1–2 Tablespoons olive oil
Sauce
- 1 ½ cups chicken stock
- 3 Tablespoons cornstarch
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon black pepper (or to taste)
- ½ teaspoon paprika
- ½ teaspoon salt (or to taste)
Additional Ingredients
- ½ cup sundried tomatoes (drained)
- 4 Tablespoons butter (cut into 4 pats)
- Fresh basil (optional garnish)
Instructions
- Brown the chicken: In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the chicken breasts and brown them for about 2 minutes per side to develop color without cooking through. Add more oil if needed.
- Prepare the crockpot: Place the browned chicken breasts in the bottom of the crockpot evenly.
- Mix sauce base: In a mixing bowl, combine the chicken stock and cornstarch. Whisk thoroughly until no lumps remain to form a smooth slurry.
- Add cream and spices: Stir in the heavy cream, minced garlic, Italian seasoning, onion powder, black pepper, paprika, and salt into the slurry until well combined.
- Combine sauce and chicken: Pour the prepared sauce mix evenly over the chicken breasts in the crockpot.
- Add sundried tomatoes and butter: Top the chicken and sauce with the drained sundried tomatoes and place 4 pats of butter on top for richness.
- Slow cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and cooked through and the sauce has thickened.
- Serve: Serve the chicken warm, garnished with fresh basil if desired, to enhance the flavor and presentation.
Notes
- Browning the chicken before slow cooking adds depth and color but is not required if short on time.
- If the sauce is too thin after cooking, you can thicken it by removing the chicken and simmering the sauce on the stovetop for a few minutes.
- Use full-fat heavy cream for the best creamy texture and flavor.
- Sundried tomatoes packed in oil can be used, just drain excess oil before adding.
- Leftovers keep well in the fridge for up to 3 days and reheat nicely.
