  • Total Time: 6 hours 45 minutes
  • Yield: 4 servings 1x

Description

This Crockpot Marry Me Chicken recipe features tender, juicy chicken breasts cooked in a creamy, flavorful sauce with garlic, Italian seasoning, and sundried tomatoes. Perfect for a comforting weeknight meal, this slow-cooker dish requires minimal prep and delivers rich, savory flavors enhanced by fresh basil garnish.

Ingredients

Scale

Chicken

  • 2 pounds boneless skinless chicken breasts
  • 12 Tablespoons olive oil

Sauce

  • 1 ½ cups chicken stock
  • 3 Tablespoons cornstarch
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper (or to taste)
  • ½ teaspoon paprika
  • ½ teaspoon salt (or to taste)

Additional Ingredients

  • ½ cup sundried tomatoes (drained)
  • 4 Tablespoons butter (cut into 4 pats)
  • Fresh basil (optional garnish)

Instructions

  1. Brown the chicken: In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the chicken breasts and brown them for about 2 minutes per side to develop color without cooking through. Add more oil if needed.
  2. Prepare the crockpot: Place the browned chicken breasts in the bottom of the crockpot evenly.
  3. Mix sauce base: In a mixing bowl, combine the chicken stock and cornstarch. Whisk thoroughly until no lumps remain to form a smooth slurry.
  4. Add cream and spices: Stir in the heavy cream, minced garlic, Italian seasoning, onion powder, black pepper, paprika, and salt into the slurry until well combined.
  5. Combine sauce and chicken: Pour the prepared sauce mix evenly over the chicken breasts in the crockpot.
  6. Add sundried tomatoes and butter: Top the chicken and sauce with the drained sundried tomatoes and place 4 pats of butter on top for richness.
  7. Slow cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and cooked through and the sauce has thickened.
  8. Serve: Serve the chicken warm, garnished with fresh basil if desired, to enhance the flavor and presentation.

Notes

  • Browning the chicken before slow cooking adds depth and color but is not required if short on time.
  • If the sauce is too thin after cooking, you can thicken it by removing the chicken and simmering the sauce on the stovetop for a few minutes.
  • Use full-fat heavy cream for the best creamy texture and flavor.
  • Sundried tomatoes packed in oil can be used, just drain excess oil before adding.
  • Leftovers keep well in the fridge for up to 3 days and reheat nicely.
