Ingredients
Scale
Potato Patties
- 420g potatoes
- 1 egg
- 40g Parmesan cheese, grated
- Salt, to taste
- Black pepper, to taste
- Breadcrumbs, enough for coating
Sandwich Filling
- 70g cheese (such as cheddar or mozzarella), sliced
- 4 slices cooked ham
- Oil or butter, for frying
Instructions
- Boil the Potatoes: Place the 420g of potatoes in a large pot filled with water. Bring to a boil over high heat and cook for about 30 minutes, or until the potatoes are tender when pierced with a fork. Drain and let them cool slightly.
- Mash and Season: Peel the potatoes if desired, then mash them until smooth. Stir in the grated Parmesan cheese, beaten egg, salt, and black pepper until the mixture is well combined and holds together when formed.
- Shape the Patties: Divide the potato mixture into 8 equal portions. Shape each into a flat, round patty about the size of a small sandwich bun.
- Coat with Breadcrumbs: Lightly coat each patty with breadcrumbs by pressing each side into a shallow dish of breadcrumbs, ensuring an even covering for a crispy outer layer.
- Prepare the Filling: Place a slice of cooked ham and a slice of cheese on a patty to create the sandwich filling.
- Assemble the Sandwich: Top with another breadcrumb-coated potato patty, pressing down gently to seal the sandwich.
- Fry the Sandwiches: Heat a generous amount of oil or butter in a frying pan over medium heat. Once hot, carefully place the potato sandwiches into the pan. Fry for about 4-5 minutes on each side until the outside is golden brown and crispy and the cheese inside has melted.
- Serve Warm: Remove the sandwiches from the pan and drain briefly on paper towels to remove excess oil. Serve warm and enjoy the crispy exterior with gooey ham and cheese filling.
Notes
- Use starchy potatoes like Russets for a fluffier texture when mashed.
- You can substitute ham with turkey or cooked bacon for variation.
- Make sure the oil is hot enough to get a crispy crust without absorbing too much oil.
- For a gluten-free option, use gluten-free breadcrumbs.
- To keep sandwiches warm, place them in an oven set to low heat after frying.
