Ingredients

Scale

Corn Casserole Ingredients

  • 1 (8-ounce) package cream cheese, cubed and at room temperature
  • 4 tablespoons butter, salted OR unsalted
  • ⅓ cup milk
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 (18-ounce) bag frozen sweet corn, thawed
  • Diced pickled jalapeños, to taste (OPTIONAL)
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Melt Cream Cheese and Butter: In a medium pot set over low heat, melt the cubed cream cheese and butter together, stirring frequently to combine without burning.
  3. Add Milk and Stir: Once melted, stir in the ⅓ cup of milk until the mixture becomes smooth and creamy.
  4. Season and Mix Corn: Add salt, freshly ground black pepper, thawed sweet corn, and diced pickled jalapeños if using. Stir until all ingredients are evenly incorporated.
  5. Transfer to Baking Dish: Pour the creamy corn mixture into an 8- by 8-inch square (or 2-quart) baking dish, spreading it out evenly.
  6. Top with Cheese: Sprinkle the shredded sharp cheddar cheese evenly over the top of the corn mixture.
  7. Bake: Place the baking dish in the preheated oven and bake for 20 minutes, until the casserole is golden on top and bubbly throughout.
  8. Serve: Allow to cool slightly before serving. Enjoy this rich, cheesy corn casserole as a delicious side dish.

Notes

  • For a spicier dish, add more diced jalapeños or use fresh jalapeños instead of pickled.
  • You can substitute sharp cheddar cheese with other cheeses like Monterey Jack or Colby for different flavors.
  • Be sure to thaw the frozen corn completely to ensure even cooking and texture.
  • This casserole can be prepared ahead and refrigerated; bake it just before serving.
  • Use unsalted butter if you want to control the salt level precisely.
