Ingredients
Scale
Doughnut Batter
- 2 eggs
- 1/4 cup coconut oil (melted, plus extra for greasing pan)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup almond flour
- 3 scoops chocolate protein powder (approx. 1/4 cup)
- 3 Tbsp cacao powder
- 2 tsp baking powder
Glaze and Topping
- 1/2 cup chocolate chips
- Sprinkles (optional, to top)
Instructions
- Whisk: Preheat oven to 350°F. In a mixing bowl, whisk together the eggs, 1/4 cup melted coconut oil, maple syrup, and vanilla extract until well combined.
- Fold: Add the almond flour, chocolate protein powder, cacao powder, and baking powder to the wet ingredients. Gently fold the dry ingredients into the batter until fully incorporated with no flour clumps remaining.
- Bake: Grease a donut pan thoroughly with coconut oil. Spoon or pipe the batter into each cavity, filling each about two-thirds full. Tap the pan on the counter to level the batter. Bake for 10 minutes, or until the doughnuts have risen and a toothpick inserted comes out clean. Allow the doughnuts to cool completely in the pan before removing.
- Glaze: In a small bowl, melt the chocolate chips with the remaining 1 tablespoon coconut oil until smooth and glossy. Dip each cooled doughnut halfway into the melted chocolate glaze, letting excess drip off. Place doughnuts on a wire rack and immediately decorate with sprinkles if desired. Let the glaze set completely before serving.
Notes
- Use almond flour for a moist texture and gluten-free option.
- Chocolate protein powder enriches the doughnuts with protein and intensifies chocolate flavor.
- Ensure doughnuts are completely cool before glazing to prevent melting the chocolate layer.
- For a dairy-free option, use vegan chocolate chips.
- Store doughnuts in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
