Instructions

  1. Activate the yeast: In a small bowl, combine lukewarm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy and bubbly, indicating the yeast is active.
  2. Mix dry ingredients: Whisk together the flour and salt in a large bowl ensuring they are well combined.
  3. Combine wet and dry: Pour the yeast mixture and olive oil into the flour mixture. Use a wooden spoon or spatula to mix until a rough dough forms.
  4. Knead the dough: Turn the dough onto a lightly floured surface and knead for about 10 minutes until it becomes smooth and elastic. A stand mixer with a dough hook can be used as an alternative.
  5. First rise: Place the dough in a lightly greased bowl, cover it with plastic wrap or a damp towel, and let it rise in a draft-free place for 1 to 1.5 hours until doubled in size.
  6. Divide and rest: Gently deflate the dough and divide into 8 equal portions. Shape each into a ball and rest covered for 5-10 minutes to prevent drying.
  7. Roll out dough: Take a dough ball and roll it into a 4-inch circle using a rolling pin on a floured surface.
  8. Add cheese filling: Place 1.5 to 2 tablespoons of shredded mozzarella in the center of the rolled dough. Fold the edges up to meet in the center, pinch tightly to seal, and reshape into a ball.
  9. Shape flatbreads: Roll each stuffed ball out into a 6-inch disc about 1/4 inch thick. Place them on a parchment or silicone mat-lined tray, cover with a damp towel, and let rest for 20 minutes.
  10. Preheat skillet: Heat a cast iron skillet over medium heat, lightly grease it with oil, then wipe off excess with a paper towel.
