Ingredients
Scale
Cake Base
- 1 box cake mix (any flavor)
- Eggs (as called for on cake mix box)
- Oil (as called for on cake mix box)
- Water (as called for on cake mix box)
Frosting
- 1 cup + 2 tablespoons canned frosting
Coating and Decoration
- 1 pound candy melts (recommend Ghirardelli Melting Wafers)
- 1/2 cup sprinkles
Instructions
- Prepare the Cake: Preheat your oven and prepare the cake mix according to the instructions on the box using the specified amounts of eggs, oil, and water. Pour the batter into a 9”x13” pan and bake as directed until a toothpick inserted comes out clean.
- Cool and Crumble: Allow the cake to cool completely outside the pan. Once cooled, break it apart and use your hands or a fork to crumble the cake into fine crumbs.
- Mix with Frosting: Transfer the cake crumbs to a bowl, then stir in the frosting until the mixture forms a dough-like consistency. If the mixture feels too dry, add more frosting 1 tablespoon at a time until it holds together well.
- Shape Cake Balls: Roll the cake-frosting mixture into tablespoon-sized balls. Place them on a parchment-lined baking sheet and refrigerate for at least one hour to firm up.
- Melt the Candy Coating: In a microwave-safe bowl, melt the candy melts in 30-second intervals, stirring well between each until smooth and fully melted.
- Dip Truffles: Using a fork to hold each cake ball, spoon the melted candy melts over it to fully coat. Gently tap the fork against the bowl’s edge to remove excess coating.
- Add Sprinkles and Set: Place the freshly dipped truffles onto a parchment-lined sheet pan. Immediately sprinkle with your choice of sprinkles before the coating sets.
- Repeat and Chill: Continue dipping and decorating the remaining truffles. Once all are coated, store them in the refrigerator until firm and ready to serve. They can be made up to 3 days in advance.
