  • ½ cup diced yellow onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoons taco seasoning

  • 8 ounces Colby jack cheese, shredded
  • 12 ounces bag of tortilla chips (Tostitos brand – use about of the bag)

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C). Grease a 12-cup bundt pan thoroughly with cooking spray and set it aside to prepare for layering.
  2. Cook Ground Beef Mixture: In a large skillet over medium-high heat, cook the lean ground beef with diced yellow onion, salt, and pepper for 6 to 7 minutes until the beef is no longer pink. Drain any excess fat to keep the mixture lean.
  3. Season Mixture: Return the skillet to medium heat and add water along with the taco seasoning. Stir and cook for an additional 2 to 3 minutes until most of the liquid has evaporated, intensifying the flavors. Remove from heat afterward.
  4. First Layer: Layer half of the shredded Colby jack cheese evenly at the bottom of the bundt pan. Follow this by spreading half of the cooked beef mixture over the cheese, then add about ⅓ of the tortilla chips on top, making sure not to pack them down to retain crispiness.
  5. Second Layer: Add the remaining shredded cheese, then the rest of the ground beef mixture. Finally, top with another ⅓ of the tortilla chips, distributing them evenly without compressing.
  6. Bake: Place the bundt pan in the preheated oven and bake for 10 minutes until the cheese is melted and bubbly.
  7. Invert Nachos: Remove the pan carefully from the oven. Place a large, heatproof plate over the bundt pan and quickly invert it so that the nachos transfer onto the plate. Gently remove the bundt pan, and if any cheese sticks to the pan, replace it onto the nachos.
  8. Garnish and Serve: Top the nachos with optional garnishes such as sour cream, diced tomatoes, and chopped fresh cilantro according to your preference. Serve warm and enjoy this delicious twist on traditional nachos.
