  • 8 Slices Sandwich Bread
  • 4 Tbsp Butter

Chicken Mixture

  • 2 Cups Cooked Chicken Breasts (shredded; rotisserie chicken recommended)
  • 1/2 Cup Frank’s Hot Sauce
  • 1/2 Cup Homemade Ranch Dressing (or store-bought)
  • 2 Tsp Minced Garlic

Cheese Spread

  • 4 Oz Cream Cheese (softened)
  • 4 Tbsp Crumbled Blue Cheese
  • 1/2 Tsp Paprika
  • 1 Tsp Ground Black Pepper
  • 1/4 Tsp Cayenne Pepper (optional)

Additional Cheese

  • 48 Slices Muenster Cheese

Instructions

  1. Prepare the Cheese Spread: In a small bowl, combine softened cream cheese, crumbled blue cheese, paprika, ground black pepper, and cayenne pepper (if using). Mash and stir all ingredients together until smooth and well blended. Set aside.
  2. Toss the Chicken: In a separate bowl, mix the shredded cooked chicken with Frank’s Hot Sauce, ranch dressing, and minced garlic. Stir thoroughly to ensure the chicken is evenly coated with the sauce mixture.
  3. Assemble the Sandwiches: Take the slices of bread and spread butter on one side of each slice. Flip the bread over and spread a generous layer of the prepared cheese mixture on four of the bread slices (one slice per sandwich). Top the cheese spread with an even amount of the buffalo chicken mixture (about 1/2 cup per sandwich). Then, place a slice or two of Muenster cheese on the remaining four slices of bread and close each sandwich with the cheese-topped slice facing down.
  4. Grill the Sandwiches: Spray a large skillet with cooking spray and heat it over low heat. Place the sandwiches butter-side-down in the skillet and cook for about 5 minutes, or until the bread is golden brown and crispy. Carefully flip the sandwiches and cook the other side until equally golden and the cheese inside is melted, about another 5 minutes. Depending on skillet size, grill in batches if needed.
