Instructions
- Prepare Egg Mixture: In a mixing bowl, combine the eggs, milk, and salt. Beat the mixture thoroughly until all ingredients are well combined and smooth.
- Cook Eggs: Heat a medium skillet over medium heat and melt the butter. Pour in the egg mixture and cook until the eggs are mostly set but still moist, stirring occasionally to prevent overcooking. Remove from heat once ready.
- Mix Fillings: Stir the crumbled cooked bacon and shredded cheddar cheese into the cooked eggs until evenly distributed.
- Assemble Egg Rolls: Lay out one egg roll wrapper. Spoon approximately 1/4 cup of the egg mixture into the center. Fold in each side of the wrapper and roll tightly towards the end. Dip your finger in water and brush it on the top corner before sealing the final roll to ensure it stays closed. Repeat this process for the remaining wrappers and filling.
- Prepare for Air Frying: Lightly spray each side of the assembled egg rolls with oil spray to promote crispiness.
- Air Fry: Place the egg rolls in a single layer in the air fryer basket, leaving space between them for air circulation. You may need to cook them in 2-3 batches depending on your air fryer size. Cook at 390°F (199°C) for 7 minutes, flipping halfway through to evenly brown all sides.
