- 1/2 tsp vanilla extract
- Additional honey or maple syrup to taste (optional)
Instructions
- Prepare Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey (or maple syrup), and lemon juice. Allow the mixture to simmer for approximately 5 minutes, stirring occasionally, until the blueberries have softened and released their juices.
- Thicken Compote (Optional): If you prefer a thicker compote, dissolve 1 teaspoon of cornstarch in 1 tablespoon of water and stir this into the blueberry mixture. Continue cooking briefly until the compote thickens slightly. Remove from heat and let it cool completely at room temperature.
- Mix Yogurt Base: In a bowl, combine the Greek yogurt and vanilla extract, mixing until smooth. Taste and add additional honey or maple syrup if you want it sweeter, then stir well.
- Fill Molds: Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full to allow room for the blueberry swirl.
- Add Blueberry Swirl: Place a spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Using a toothpick or skewer, gently swirl the compote through the yogurt to create a marbled effect without completely blending the two.
- Freeze: Place the molds in the freezer and freeze for at least 3 hours, or until the yogurt bites are completely solid.
- Serve: Pop the frozen yogurt bites out of the molds and transfer them to an airtight container to store in the freezer. Before eating, let them sit at room temperature for 2 to 3 minutes to soften slightly for the best texture.
