Instructions

  1. Prepare Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey (or maple syrup), and lemon juice. Allow the mixture to simmer for approximately 5 minutes, stirring occasionally, until the blueberries have softened and released their juices.
  2. Thicken Compote (Optional): If you prefer a thicker compote, dissolve 1 teaspoon of cornstarch in 1 tablespoon of water and stir this into the blueberry mixture. Continue cooking briefly until the compote thickens slightly. Remove from heat and let it cool completely at room temperature.
  3. Mix Yogurt Base: In a bowl, combine the Greek yogurt and vanilla extract, mixing until smooth. Taste and add additional honey or maple syrup if you want it sweeter, then stir well.
  4. Fill Molds: Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full to allow room for the blueberry swirl.
  5. Add Blueberry Swirl: Place a spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Using a toothpick or skewer, gently swirl the compote through the yogurt to create a marbled effect without completely blending the two.
  6. Freeze: Place the molds in the freezer and freeze for at least 3 hours, or until the yogurt bites are completely solid.
