Ingredients
Scale
Chips and Seasoning
- 7½ oz bag unsalted kettle chips
- 1 tbsp smoked paprika
- 1 tsp MSG
- Pinch seasoned salt
- ¼ tsp garlic powder
- Dried chives to taste
Bacon and Toppings
- 4–5 slices bacon
- Blue cheese, crumbled to taste
- Honey drizzle
- 1 tbsp bacon grease (reserved from cooked bacon)
Instructions
- Cook the Bacon: Preheat your oven to 400℉ and bake the bacon slices for 12-16 minutes until they turn golden and crispy. Once done, place the bacon on paper towels to drain excess grease.
- Reduce Oven Temperature: Lower the oven temperature to 325℉ to prepare for baking the chips.
- Prepare Chips on Baking Sheet: Place the kettle chips on a baking sheet and drizzle with 1 tablespoon of the reserved bacon grease for added flavor.
- Mix Seasonings: In a small bowl, combine the smoked paprika, seasoned salt, garlic powder, MSG, and dried chives. Stir well to form a flavorful seasoning blend.
- Top Chips: Generously crumble blue cheese over the chips. Sprinkle the seasoning mixture evenly on top and gently toss or mix to distribute the flavors.
- Bake the Chips: Place the baking sheet back into the oven and bake at 325℉ for 15-17 minutes until the cheese starts to melt and the chips are nicely infused with the spices.
- Finish and Serve: Roughly chop the cooked bacon and sprinkle it over the baked chips. Drizzle honey on top for a subtle sweetness and serve immediately while warm and crispy.
Notes
- You can adjust the amount of blue cheese depending on your preference for cheesiness and tang.
- Bacon grease adds great flavor to the chips; if you prefer, substitute with a little olive oil or butter.
- Use honey sparingly if you want a less sweet contrast to the savory blue cheese and bacon.
- For a spicier variation, add a dash of cayenne pepper to the seasoning mix.
- Serve immediately to enjoy the crisp texture, as the chips may become soggy if left to sit.
