  • 1 Lemon zest

Instructions

  1. Prepare the ingredients: Poke a hole in each cherry tomato to allow steam to escape and flavors to penetrate. Thinly slice the garlic cloves for even roasting.
  2. Combine in baking dish: In a baking dish, add the tomatoes, sliced garlic, pine nuts, honey, lemon zest, olive oil, salt, pepper, crushed red peppers, and oregano. Mix gently to combine the ingredients evenly.
  3. Add feta on top: Place the block of feta in the center of the baking dish atop the tomato mixture. Drizzle additional olive oil and sprinkle oregano over the feta for enhanced flavor.
